Vegetables - Not Mush

Growing up, my mom was not so talented in the vegetable department. It was a short list of carrots, potatoes, onions, and celery. When she cooked them, they were mush.

Vegetables are a great way to help you fill up without gaining weight....unless you slather them with butter. Experiment when cooking vegetables so they are done the way you will eat them. You can steam, boil, or fry them in a pan. Carrots, broccoli, and cauliflower are great when they still have a little chew to them.
Branch out....,my latest veggie is butternut squash. I cut it in half, don't bother to scoop out the seeds til later, turn it upside down on a cookie sheet, cover with foil and bake it in the oven until it is soft. Scoop out the seeds and put a little butter, salt and pepper on it. YUMMY!
